Mom’s Apple Cake

Ok…technically I don’t know who’s Mom invented this recipe but it’s something that I found a few years ago and my whole family loves it.  It’s moist and sweet with great apple flavor and since Fall is approaching with it’s crisp apples and cooler temps, I figured I’d share one of my favorite Fall recipies.

Mom’s Apple Cake

2 C. sugar
4 eggs
1 C. vegetable oil
3 C. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 C. diced apples
1 C. dark seedless raisins
1 C. nuts (optional)
Preheat oven to 350 F.  Grease and flour a large bundt pan.  With; mixer…beat sugar and eggs for 5 minutes (very important).  Slowly beat in oil.  Beat in flour, soda, salt, cinnamon and vanilla.  With spoon, stir in apples, raisins and nuts.  Bake 1 hour and 10 minutes or util done (test with toothpick or wooden skewer).  Wait a bit for cake to cool and remove from pan.
GLAZE:  make a glaze of powdered sugar and apple juice (or water) to drizzle over cooled cake.
