Sleepy Saturday and Easy Pork Chop Marsala

This has been a pretty laid back Saturday.  A bit of cleaning, a little crafting, some movie watching with the youngin and just basically hanging around at home.  I’ve got a small ham that I’m about to make for supper and I’m thinking a little baked potato and some baked beans on the side sounds pretty good.

Lunch was easy….I found a recipe for Chicken Marsala awhile ago and kind of memorized the basics of it.  Now, whenever I’m feeling like making something rich and tasty, I just throw this together with whatever meat I’ve got on hand.  Marsala goes great with beef and especially pork.  It’s not just for chicken around here.

Easy Pork Chop Marsala

Couple of pork chops

1 can chicken stock

1/4-1/2 cup marsala wine

1 can mushrooms

1/4 tsp. black pepper

2 cloves garlic  (minced)

olive oil

Put about 2 TB olive oil in pan.   Bring to med heat.  Add garlic and let cook for about 30 seconds.  Throw in the pork chops and let them brown slightly on each side.  Add the chicken stock and cook for about 15 minutes.  Add wine and mushrooms and continue cooking until the sauce is reduced and the pork chops are cooked through.  Season with pepper and serve.
