Berry Bottom Babies

This is one of our all-time favorite cookies.  Very easy to make and you can change the “flavor” to suit your mood or the items available in your pantry.  My kids like to help make this one.

Berry Bottom Babies

3/4 C. butter, softened
2/3 C. sugar
1 egg
1 tsp. vanilla extract
2 C. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1/3 C. jam of your choice
 
In large mixing bowl, cream butter and sugar until light and fluffy.  Beat in egg and vanilla.  Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well.
 
Form 1TB size balls of dough.  Place on greased cookie sheets and create a deep well in the center of the ball.  Fill with jam.  Bake at 350 F until the edges are lightly browned.  Remove to wire racks to cool. 
Makes about 5 dozen.
 
*Jam ideas that work well: apple butter, raspberry, strawberry, blackberry, blueberry.  Also  good with pumpkin, cherry, blueberry or apple pie filling.
