Easy Rich Almond Pie

Yes…almond pie.  Kind of a twist on a traditional pecan pie but much more rich and thick.  Perfect for holidays and it is even better if you let it sit overnight in the fridge.  It is EXTREMELY rich….so just a small piece is very satisfying.

 

EASY RICH ALMOND PIE

(*see the easy pie crust recipe below also!*)

2 C. almonds (coursely chopped in a food processor)

3/4 C. pancake syrup

1/4 C. molasses

3TB  butter

3 large eggs

1/2 tsp. salt

1/2 C. sugar

Mix all ingredients in a large bowl.  Put into prepared pie shell.  Bake in preheated oven at 350 for about 50 minutes or until set.  Let cool completely.  **This pie is actually better if you let it sit overnight in the fridge**

EASY PIE CRUST

(this is the EASIEST pie crust you’ll ever make!)

1-1/2 C. flour

1/2 tsp. salt

1 tsp. sugar (heaping)

3 T. cold water

1/2 C. oil

Put dry ingredients into a 9″ pie pan.  Mix thoroughly.  Add water and oil.  Stir with fork.  Pat smooth and edge with decorative border.  Fill with your favorite filling and bake accordingly.
