Hearty Sausage and Cheese Potato Soup – Crockpot Recipe

This is a quick recipe that I threw together last night.  Very easy and extremely hearty…. perfect for cold winter evenings.  The original “recipe” that I made used a couple of bags of my own frozen mashed potatoes (that I made earlier this year to use during the winter) but you could also easily use some of those flavored, instant potato mixes that you can buy from the store.  Pretty easy-peasy recipe using ingredients that you’d find in your pantry or fridge.


One pkg. smoked polish sausage or kielbasa of your choice

One can low sodium chicken broth

One pkg prepared, flavored mashed potatoes (something with garlic, sour cream or chives would be good.  They come 2 pkg to a box and you only need one)

1/3 C. cream cheese

1 can Fiesta cheese soup

2 tsp. black pepper (optional but I think it give it a nice little  kick)

Cut polish sausage into bite size chunks.  Throw them in the crock pot.  Add the chicken stock.  Prepare the instant mashed potatoes and add those.  Add the rest of your ingredients, give a good stir and cook on low for about 6 hrs.  Enjoy.  🙂

Optional:  I threw in some leftover, chopped bacon from the night before.  You can also add onions or garlic if desired.
